Ummm....It's YELLOW??

While Mama was making me a cup of Blue Mountain as usual... (Dad still thinks I drink only Brazil) I saw something unusual...Dad was roasting a very COOL color of beans. It looks very pale, almost bleached with a hint of yellow... and the weight of the beans were very light. As he watched me be inquisitive (and you know he had a lot say, but didn't) I couldn't help but be amazed that color was so different, the weight was so different..but also the sound was different...the beans sounded almost hollow. "Normal" green beans feel like small stones.

Finding out it was our Indian Monsoon Coffee. Got Mama to hold a handful of the Indian and a handful of Kona beans! see the difference!!


So I walked back over there a bit later and oddly enough, the once bleached yellow beans are now a trio of brown and tans... Truly one of the prettiest beans I have seen! and yes, that's a professional opinion!

Why the Kitchen?

So you decide to have a few people over for dinner...you clean up and maybe even have the house decorated for upcoming holidays...why does everyone congregate in kitchen? We have to admit that although we would like our space to prep foods and make a mess, the kitchen is the heart of all the gossip, laughs and entertainment. Last night, we celebrated Dad's 71st birthday, too lazy to clean up after such a large dinner, the men sat at the dining table eating our Wicked Jacks Butter Rum Cake with vanilla ice cream and the women.... gossiping in the kitchen (about the men) with our signature coffee mixed with sweetened condensed milk for an extra creamy and sweet flavor.

Espresso or Expresso?

Ok, we get this question all the time...first of all, you shouldn't be anywhere that you have to ask for an espresso or Expresso, you should have ordered it from us, and have it pressed in the luxury of your own home! But let's say you were put in a position of no other choice, needing to order...you should ALWAYS ask for an ESPRESSO. Some quick facts: Espresso is not a type of bean, blend or roast type, instead it is simply another method of brewing coffee. It is produced by pushing hot water at high pressures, through a bed of finely ground, compacted coffee, topped with a dark golden cream, called crema (when brewed properly). The crema is one of the visual indicators of a quality shot of espresso!

To freeze or not to freeze?

How and why someone ever suggested to freeze or refrigerate coffee is beyond me! If our freshly roasted coffee is in your fridge...go home and take it out! In our opinion, the condensation ruins the flavor and aroma, leaving you with 'flat' cup by the time you get to brew your last pot.

The best place for your opened coffee is in an airtight glass canister. You can purchase these just about anywhere- we like the glass canisters with the little snappy-thingy on the side to ensure it being air tight. If you purchase several bags, and won't get to it for a while, keep it sealed in our bags--good for 3 months.
